Cooking in Community Series
Join us virtually for a free live cooking demo! Putting together a meal doesn’t have to be an intimidating slog. To prove it, we’re featuring recipes that prioritize simple preparation, a limited ingredient list, and/or multiple servings. We’ll provide the recipe (and substitutions, where possible). All you need to do is bring yourself and your ingredients to our Zoom room. Emily Arkin, MS, RD, LD, CSDH will be walking through the recipe and offering tips throughout. You can join to learn a new kitchen skill, ask questions along the way, or just meal prep alongside the group. Note: these events are open to the public.

Cherry Tomato Linguine with Shrimp (adapted from Run Fast. Eat Slow.)
Ingredients:
½ box (8oz) of long pasta (e.g. spaghetti, linguine, fettuccine) (substitute: gluten-free pasta of choice)
1 pint of cherry tomatoes
2 cloves of minced garlic (substitute: ½ teaspoon garlic powder; or omit in favor of garlic-infused oil throughout recipe)
½ lb (8oz) precooked shrimp (substitute: other precooked proteins, like rotisserie chicken or sausage)
¼ teaspoon red pepper flakes (optional)
basil leaves
½ cup grated Parmesan cheese (optional)
+salt, olive oil
Instructions:
Bring a salted pot of water to boil. Add pasta and cook according to package instructions. When finished cooking, set aside ~1 cup of pasta water and drain the rest.
Heat a generous drizzle of olive oil in a skillet over medium heat. Add the tomatoes and ½ teaspoon salt. Stir occasionally until the tomatoes burst (~4-5min)
Add garlic, pepper flakes, and some pasta water; cook until sauce is thickened. Stir in basil and shrimp.
Transfer sauce to pasta pot. Toss and serve topped with cheese, if desired.
